Peanutbutter Granola Bars

Granola Bars are a great on-the-go snack! This recipe is perfect for back-to-school and soccer mom season. Most of the granola bars you can find at the store are full of corn syrup, mystery ingredients, and junk. This is my go-to granola bar recipe and it’s kid approved! It’s super easy, doesn’t take too much time, and simple to customize. I like to make this recipe at the beginning of the week and it provides simple grab-n-go nourishment for the whole family.

Ingredients:

  • 2-1/2 cups old fashioned rolled oats

  • 1/2 cup shredded unsweetened coconut

  • 1 cup chopped pecans *use your favorite nut like almonds or peanuts!

  • 1/2 cup natural peanut butter

  • 3/4 cup local honey

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • 1/2 cup dried cranberries or cherries *I like to use the unsweetened varieties

  • 1/2 cup dark chocolate chips

Recipe:

  1. Preheat to 350

  2. Mix together rolled oats, pecans, and coconut and sprinkle on a parchment-lined sheet pan. Toast until coconut turns golden.

  3. Melt the peanut butter, butter, and honey in a sauce pan until creamy. Keep stirring so you don’t burn the bottom.

  4. Remove sheet pan from oven.

  5. Combine peanutbutter mixture and all toasted ingredients in a bowl.

  6. Line baking sheet with parchment paper and spread mixture evenly - press it down firmly

  7. Bake for 20 minutes / until edges become golden!

  8. Cool, cut, serve! Store in an air-tight container for up to 10 days.
