Sunshine Tea

This citrusy-ginger Iced tea tastes like Summer Sunshine in a cup! It is packed with healthy ingredients that will leave you feeling so, so good! In the summer I really love to brew my own iced tea & my iced coffee. When I brew them at home I know exactly what’s in them, I spend less on little treats, and reduce waste as I’m not using the throw away cups found at coffee shops. Read on to learn how to make this scrumptious tea!

Ingredients:

  • Chopped Ginger (About 1/2 cup-3/4 cup, I measure with my heart)

  • 2 Organic Naval Oranges

  • 2 Organic Lemons

  • 2 Organic Limes

  • 1/3 cup honey or maple syrup (you can add more or less, it’s about personal preference!)

  • You can also add freshly squeezed clementine Juice for extra sweetness! (optional)

Tools:

  • Mesh strainer

  • Glass bottle/Pitcher (for storing the tea)

  • Glass bowl/Pitcher (for making the tea)

  • Funnel (optional but helpful when pouring from one container to the next)

  • Zester (you can use a cheese grater if you don’t have a zester)

Instructions: 

  • Using a small pot, bring 3-4 cups of water to a boil, lower heat and add chopped ginger. Simmer for 5-10 minutes.

  • Zest your limes, lemons, and oranges into the pot with the ginger.

  • Halve your fruits and squeeze the juices into a large pitcher or bowl. It’s best place a mesh strainer over the container so it can catch any pulp or seeds as you squeeze!

  • Pour the citrus juices into your bottle/pitcher that you’re storing your tea in and add maple syrup/honey. Shake/Stir well!

  • Pour the Ginger water over the mesh strainer into the container you squeezed the juice into. Add ice cubes to help cool.

  • Once your ginger tea has cooled a bit, pour it in with the citrus juices. Mix well!

  • Refrigerate and serve with ice!

You can add a splash of OJ and Seltzer to make yourself a sweet mocktail. My kids love an extra splash of orange juice in theirs! I’ve also mixed in elderberry syrup on occasion.

    Lime - Rich in antioxidants and vitamin C! Supporting healthy skin and helping fight off viral infections. Did you know that there are studies that show that consuming citrusy juice, such as orange, lemon, and lime, has been linked to preventing kidney stones?
    Honey or Maple Syrup - I love the sweetness of natures candy! These sugars are easier for our body to digest and actually have health benefits too!
