Crock Pot Chili

INGREDIENTS

  • 2 cans organic tomato paste

  • 1 large can organic diced tomatoes

  • 3 cans organic beans (red, white, black)

  • 1 yellow onion

  • 1 red pepper

  • 1 green pepper

  • 2 jalapeño peppers

  • 3 tablespoons chili powder

  • sprinkle in more flavor ~ garlic, onion powder, paprika, cayenne pepper, chipotle seasoning

  • OPTIONAL: Cooked Ground beef or turkey seasoned with chili powder for a protein boost! You can also add in other veggies like chopped spinach, kale...

DIRECTIONS

  1. Prepare and chop vegetables, drain and rinse canned beans

  2. Dump all ingredients into the crock pot!

  3. Cook on low for 6-8 hours - stirring around the 4 hour mark + tasting a spoonful to make sure your flavors are aligned with your desired outcome. *Add honey or maple syrup to sweeten. Hot sauce or habanero peppers are a great way to boost flavor if you're craving more heat.

  4. Serve as is or with shredded cheddar, sour cream, corn bread, or tortilla chips!

    NOTE: If your chili isn't thick enough, corn starch will help thicken.

    Chili freezes well and makes for great leftovers! We’ll use our leftover chili to make nachos, quesadillas, sweet potato boats, chili cheese dogs, and as a baked potato topping.
