Glow Soup

INGREDIENTS

  • 1lb Carrots (shredded & chopped)

  • 3 Leeks, chopped

  • 1 Orange Pepper

  • 1 Sweet Onion

  • 2 Sweet Potatos

  • 1 can unsweetened coconut milk

  • ~2 tblsp avocado oil (olive oil, coconut oil, or butter work too!)

  • 3-4 tsp tumeric

  • 1-2 tblsp coriander

  • 1tsp cayenne pepper

  • 1 tblsp minced Garlic

  • 5 cups vegetable broth (or chicken bone broth for a flavorful nutrient boost!)

DIRECTIONS

  1. Preheat Oven to 400 - Place sweet potato in the oven and cook until soft enough to poke with a fork

  2. Prepare vegetables: peel carrots, chop all Vegeatbles Place chopped veggies on a sheet pan lined with parchment paper and drizzle with avo oil/melted butter.

  3. Roast carrots, onions, pepper, and leeks for 30(ish) minutes

  4. Cool veggies and the roasted sweet potato - add to a food processor with the coconut milk. Blend to a puree.

  5. In a large pot combine the orange puree with broth and add coriander, tumeric, and cayenne pepper

  6. Simmer for 15-20 minutes, occasionally stirring.If you'd like a smoother consistency, use the food processor again after simmering to break it down further.

  7. Serve!

RECIPE NOTE:

Pairs well with sandwiches and pita. A sprinkle of parmesan cheese is delicious.

Store leftovers in the fridge for 3-5 days. You could also pour it over prepared rice and add in cooked chicken, beef, or turkey.

This soup freezes + reheats well!
