Fudgy Brownies

INGREDIENTS

  • cup (2 sticks) unsalted butter, melted

  • 1 1/4 cups sugar in the raw

  • 1/2 cup maple syrup

  • 4 large eggs

  • 1 tblsp pure vanilla extract

  • a pinch of Pink Himalayan salt

  • 1 cup whole wheat flour

  • 1 cup good quality cacao or black cocoa

  • 1 cup deliciously dark chocolate chips (or more!!!)

  • a splash of brewed coffee (optional)

DIRECTIONS

  1. Preheat oven to 350°F & Lightly grease an 8x12-inch baking pan.

  2. Add melted butter and sugars together in a medium-sized bowl. Crack in the eggs and pour in the vanilla & splash of coffee whisk until combined.

  3. Sift in flour, cocoa powder and salt. With a baking spatula, gently fold the dry ingredients into the wet ingredients until JUST combined.

  4. Add in the chocolate chips (and any extras like nuts!)

  5. Pour batter into prepared pan, smoothing the top out evenly.

  6. Bake for 25-30 minutes for just under-done brownies (fudgier texture) or until the center of the brownies no longer jiggles and is JUST set to the touch!

    OR 35-40 minutes if you like your brownies well set and firm.

RECIPE NOTE: Brownies will continue baking and set in the hot pan out of the oven. If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies. After 15-20 minutes, carefully remove them out of the pan and allow to cool to room temperature before slicing with a metal spatula.
